I am a huge fan of fast and easy recipes. Especially right now when I don’t have long each evening to pull dinner together due to crazy work schedules and busy days. However, I don’t like sacrificing flavor or nutrition for speed. Fortunately the recipe I am sharing today is both favorable and speedy. Exactly how I like things.
This autumn harvest sauté is the perfect side dish for any meals this fall. We have it on a regular basis, at least once a week, with whatever protein is on the menu. It has paired deliciously with chicken, fish, and steak! You can throw in other veggies to pack a bigger punch too or tweak the flavors to your liking. It’s versatile and adaptable.
Autumn Harvest Saute
Prep Time: 10 minutes
Cook Time: 12 minutes
Ingredients (5 servings)
- 4 red potatoes
- 1/2 onion
- 2 carrots
- 1/2 cup frozen green beans
- 1 tablespoon parsley
- 1 teaspoon minced garlic
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
Heat 1 tablespoon olive oil in a large pan over medium heat.
Chop all veggies to desired size. Add to pan.
Toss with seasoning.
Saute for 10-12 minutes until fork tender.
