Happy Wednesday friends! I am halfway into my first week back and doing well … it’s been a little tough getting back into the swing of things. One of our professors opened her class yesterday “welcome home from break … that is probably the last long break you will have in your life”. Nothing like perspective right? Ha. Any-who … I am linking up today with Jenn for What I Ate Wednesday. My clean eating challenge is thriving and I am LOVING seeing how amazing my challengers are doing! In honor of that I thought I would share a day of my ears this week …. I even stuck with my meal plan 😉 (Please excuse the low quality photos – it’s dark when I leave for school and dark when I get home which is a little depressing haha).
I have been sticking with my tried and true breakfast of 2 eggs, nitrate free bacon, fruit, and coffee. It only takes 5 minutes to prep and it’s worth it to have a hot and filling breakfast in the morning!
I hit the gym after dropping the girls off at school. I got in an awesome hour of lifting, showered, and hopped in the car to head to class. On the way I enjoyed my chocolate vegan Shakeology blended with unsweetened almond milk, 1/2 a banana, and ice. I have noticed SUCH a difference with drinking ShakeO everyday. My energy levels are higher, I have way less cravings, and my hair/nails are crazy healthy. #obsessed
For lunch I had shredded chicken mixed with buffalo sauce on a bed of romaine and homemade ranch. My love for buffalo sauce runs deep and this lunch was great 🙂
On my way home from class I munched on carrots and cucumbers. The cucumbers were a bit mushy which wasn’t the best thing ever haha. How cute is this container? $2.99 at TJ Maxx!
Dinner was grain-free BBQ chicken from Against All Grain, baked sweet potatoes with coconut oil, and bacon green beans. SO good.
Overall it was a great day of eating and I was super proud of myself for sticking to my plan. SIDE NOTE: I have only had 3 Diet Cokes in 10 days. That’s HUGE for me guys. HUGE.
