Where has this week gone? I can’t believe it is already Wednesday! I have crammed a ton of stuff into the last two days including mommy and me yoga! I am volunteering at the hospital the next couple of days too. Busy busy bee 🙂 Since it’s Wednesday, it’s time for another “What I Ate Wednesday” with the lovely Jenn of Peas and Crayons (PS – her whole wheat oatmeal pancakes look BOMB).
Simple yet delicious breakfast. Whole egg and egg whites scrambled with spinach, fresh fruit, and some bacon. Super excited that berries are coming back into season in the Deep South!

I picked up my favorite chicken salad from the deli to have on hand for the week. Food For Life recently sent me a sample of their new Ezekiel 4:9 Sprouted Flax Bread and I thought this was a great time to try it out. Ezekiel 4:9 Sprouted Flax Bread is flour free, has 5g of protein, 4g of fiber, omega 3s, and is low glycemic. I LOVED it! The flax seeds added some fun texture and I definitely felt satisfied.
I had a VitaTop Carrot Cake for a snack. I love me some muffins and this was a great way to have a treat without all the calories. Satisfied my sweet tooth for sure.
Creamy mushroom chicken from the current issue of Clean Eating Magazine. I made some adaptations to it though. The whole family scarfed it down and Em even licked her plate. If you’re on my Instagram you see the proof 😉 Served it up with roasted broccoli, butternut squash, sweet potatoes, and carrots.
Happy day of eats if I do say so myself. As always, I missed some snacks along the way but I don’t always have my camera (shocker) nor care to snap a photo of every morsel that crosses my lips 😉
