Happy Wednesday friends! I am excited that we are halfway through the week …. long days of training means a tired mama 😉 I have been learning so much in this resiliency training and I am super excited to share some of it with you soon! Chris is doing something exciting this week too that I also can’t wait to share. Any-who, I have actually had to prepare my eats this week since I am in class all day long. Good thing it’s time for What I Ate Wednesday with Jenn from Peas and Crayons (who just made a HUGE and exciting announcement!!).
A favorite weekday breakfast! Baked apple cinnamon oatmeal, fresh fruit, and iced coffee. I made the oatmeal over the weekend for fast and healthy breakfasts this week as we are trying to run out the door.
Being in a classroom all day means that I had to pack enough snacks. I brought a Larabar, veggies with hummus, and homemade trail mix.
UGLY photo. I made a burrito with brown rice, black beans, shredded chicken, corn, and taco seasoning. I topped it with guac and salsa.
I got home with just enough time to whip together dinner. I stuck with a family favorite of lasagna rolls. YUM.
My Sunday meal prep really came in handy this week with my snacks and meals. I now realize that whenever I get into graduate school this is how it’s going to work for me! Love it.
