Beyond just being WIAW, today’s challenge for Elf For Health is to eat 3 servings of veggies before 2PM. I took this challenge to heart yesterday too and embraced it fully as shown in the following meals.
Egg and egg white scramble with spinach and nutritional yeast topped with salsa. One slice of bacon and berries on the side. Pumpkin spice coffee in a Santa mug is the best way to start the day.
I have recently started juicing using my food processor and am obsessed. I made a spinach, apple, carrot, and celery juice yesterday morning to have post-workout. It was delicious and fresh which was the perfect combo following a sweaty workout.
A massive salad beast was for lunch. In this bowl of awesome was: spinach, kale, romaine, edamame, tomatoes, peas, turkey, cucumber, and green pepper with some balsamic vinaigrette. This bad bow kept me full for hours.
A big bowl of chicken tortilla soup with a little cheese and some crispy tortilla strips. I love making a big batch of soup because it means there will be leftovers 😉
I rarely remember to take photos of my snacks. I had a Larabar, a handful of pumpkin seeds, a sugar cookie, and probably something else that I can’t remember.
