Whew … it’s Wednesday already?? I have so much to do before my mother-in-law comes tomorrow … EEK! Anyways, since it IS Wednesday, it means it’s time for another “What I Ate Wednesday” with the wonderful Jenn of Peas and Crayons 🙂
Nothing too exciting here … my usual pre-run breakfast. Whole wheat toast with PB and chia seeds. Banana on the side.
I had 5 miles on tap for my half marathon training plan. I did the 5 miles in 45:54 … or 9:10/mile. WAY better than my bad run from this weekend. I also did 15 minutes of core for my Best Body Bootcamp workout 🙂
Chicken Caprese Panini. I put slice grilled chicken breast, sliced tomatoes, spinach, mozzarella, and Italian seasoning on whole wheat bread and “pressed” it in my George Foreman. Ooey gooey cheese is always a win in my book 🙂
Herbed butter roasted chicken. The trick is putting the butter UNDER the skin. It was absolutely delicious and now we have left-overs for lunches for the rest of the week. On the side we had Alexia Harvest Sauté.
Emmie’s Newest Eats
Applesauce! Emmie is SUCH a good eater and loves her veggies as much as the fruits. She also had sweet potatoes for the first time over the weekend 🙂
Anyways, happy hump day friends! We are half-way to the weekend 🙂
